Leve-as ao lume em a\u0301gua temperada com louro, a salsa, 1 talo de aipo e sal.<br \/><br \/><\/p><p><strong>1.<\/strong> Logo que estiverem cozidas descasque-as e pele-as em quente, \u00e0 medida que as vai retirando da \u00e1gua com uma escumadeira.<br \/><strong>2.<\/strong> Escorra e triture-as no pass-vite.<br \/><strong>3.<\/strong> Entretanto, pique para uma panela as cenouras, a cebola descascada, a parte branca do alho franc\u00eas e o restante talo de aipo. Junte o azeite, tape e deixe estufar devagarinho.<br \/><strong>4.<\/strong> Regue com caldo de carne ou de galinha e deixe ferver em lume brando, para reduzir um pouco do caldo e apurar.<br \/><strong>5.<\/strong> Reduza a pur\u00e9, com a varinha m\u00e1gica.<br \/><strong>6.<\/strong> Adicione, pouco a pouco, o pur\u00e9 das castanhas, mexendo bem para n\u00e3o fazer grumos.<br \/><strong>7.<\/strong> Tempere com pimenta. Junte o leite quente, sem deixar de mexer e leve ao lume para levantar fervura.
